Stuffed French Toast Bites

8 slices thick-sliced white bread or brioche bread
4 tablespoons chocolate hazelnut spread (like Nutella)
4 tablespoons cookie butter (like Biscoff)
3 tablespoons butter
1/3 cup heavy cream
2 eggs
1 tsp cinnamon
1 tsp vanilla extract
1/4 cup granulated sugar
1 tablespoon cinnamon
Directions
Spread a thin layer of one spread flavor (either nutella or cookie butter) onto one slice of bread. Top it with another slice of bread to make a sandwich.
Use a serrated knife to cut off all the crust, be gentle to avoid mashing the bread which will misshapen the french toast bites.
Repeat with the alternate flavor (if using both) so some sandwiches are the cookie butter variation and others are nutella.
Cut each of the sandwiches into 4 equal squares. In a large bowl whisk together all of the french toast batter ingredients.
Heat a large skillet to medium-low and melt butter in the skillet.
Dunk several french toast bites into the batter at a time and then place in the skillet. Cook in batches a few minutes per side until each side is golden brown.
Toss in the cinnamon mixture and serve warm.
