Chocolate Protein Cheesecake

3/4 cup cottage cheese

1/2 cup sugar-free chocolate chips (e.g., from @lilys_sweets or @choczero)

1 large egg

1 tsp vanilla

2 tbsp sweetener

How To Make It:

Directions

Heat oven to 350°F, then grease two small ramekins.

Gently melt the chocolate chips and set them aside.

In a blender, pulse the cottage cheese until smooth, then quickly blend in the melted chocolate to keep it from setting.

Toss in the egg, vanilla, and sweetener for one final blend.

Pour into the ramekins, bake for about 20 minutes, and chill before digging in.
