SMOKEY LAMB CUTLETS WITH AVOCADO SALAD

Ingredients

8-10 lamb outlets 1½ tbsp barbecue seasoning 1 tsp olive oil 2 avocados, sliced 300ml lemon juice 150g button mushrooms, sliced lOOg baby spinach leaves

Directions

1 Coat both sides of the lamb outlets in the seasoning. Heat the oil in a frying pan over a medium-high heat and cook the outlets for three minutes per side. 2 Place the avocado slices and one tablespoon of the lemon juice in a bowl. Add the sliced mushrooms and spinach leaves and toss gently

to combine. Serve the outlets with the avocado salad and drizzle with the remaining lemon juice.
