Chocolate Cookies

Ingredients

150g unsalted butter (browned)

125g light brown sugar

175g caster sugar

1 tsp vanilla

1 large egg

25g cocoa

225g plain flour

1/2 tsp baking powder

1/2 tsp bicarbonate of soda

1/2 tsp (heaped) flaked sea salt

300g chocolate chips or chopped chocolate - I use equal quantities of white, milk and dark chocolate.

Directions

Preheat the oven to 160°c fan

Cream together the butter and sugar until pale and fluffy. Beat in the egg and vanilla.

Sift in the dry ingredients and combine gently. Add the salt and chocolate chips and stir until completely combined.

Roll into walnut sized balls and place 2” apart on a baking sheet lined with baking paper or a silicone mat.

Bake in the centre of the oven for 5 mins. Remove the tray and bang it on the counter 5-6 times to encourage the cookies to spread. Return the try to the oven for a further 5 minutes.

Remove the cookies and cool in the tin for 5 mins and then use a palette knife to move them to a cooling rack.
