Paneer Bhurji

Ingredients

1 large yellow onion

2 Roma tomatoes

1 spoon ginger garlic paste (optional)

1/3 block paneer

1 green chili

2 tbsp canola oil

1 spoon mustard seeds (optional)

1 spoon cumin seeds

1 and a half spoons salt

1/4 spoon turmeric

1/4 spoon red chili powder

1 large spoon coriander powder

1 spoon kasuri methi (crush in hands before adding)

1/2 spoon garam masala powder

Directions

  1. Shred paneer (if using homemade paneer crumble and then lightly toast in oil before using)

  2. Mince green chili, onion, tomato

  3. Heat oil in pan over medium heat

  4. Once warm add mustard seeds and allow to pop

  5. Add cumin seeds

  6. Add in onions and green chili (can add ginger garlic paste if you’d like) and allow to cook

  7. Add in spices (salt, turmeric, red chili powder, coriander powder)

  8. Add tomatoes and allow it to cook until the water cooks off, stir frequently (~5 mins)

  9. Add kasuri methi and garam masala

  10. Change to low heat and add paneer

  11. Stir until paneer mixes in but don’t allow to melt or burn
