Chile Lime Chipotle Chicken

2 ½ lbs boneless chicken thighs
salt & pepper
1 tbsp paprika
1 tbsp aleppo pepper (or chili flakes)
1 tbsp garlic powder
½ tbsp chipotle powder
½ tsp coriander
¼ tsp cayenne
2 tbsp fresh cilantro
1 tbsp olive oil
2 tbsp yogurt
juice of 1 large lime
½ large red onion (sliced)
instructions:mix everything together really well, including the onion. marinate 2–4 hrs if you have time (or cook right away).
let chicken sit out 30 mins, then bake at 425°F for 50–55 mins packed tightly in a loaf pan.
Directions
pour out the juices (save them 👀), slice, and serve however you like.
so good for high protein bowls, tacos, or meal prep all week 🔥
