Chipotle Chicken Bowls

Ingredients

Chicken breast

Can of chipotles in adobo sauce (7.5oz)

Black beans

White rice

Avocado

Greek yogurt (sour cream)

Shredded lettuce

For Salsa:

Orange bell pepper

Pint of cherry tomatoes

Red onion

1-2 jalapeños

Directions

Blend chipotles peppers with can of water. Add chicken breast and blended chipotle peppers to bag to marinate for 3+ hours.

Cook white rice.

Dice and cook the chicken in a pan when done marinating. Add beans when chicken is done cooking to warm up.

Mix Greek yogurt with a little lime juice and honey.

Ali’s Salsa

Finely chop orange pepper, tomatoes, jalapeños, and red onion. Add lime juice and salt to taste.

Make guac, Ariel’s Avocado sauce, or serve with sliced avocados.

Serve chicken over rice with lettuce, salsa, avocado of choice, and Greek yogurt.
