Golden, creamy, bursting with blueberries — and totally guilt-free!
Ingredients (Makes 6 roll-ups):
6 zero-carb small keto tortillas
1/3 cup fresh blueberries
6 oz cream cheese, softened
2 tbsp plain Greek yogurt (unsweetened, full fat)
1 tsp vanilla extract
2 tbsp butter, melted
3 tbsp Swerve confectioners’ sugar substitute (plus extra for dusting)
Directions
Preheat your air fryer to 375°F (190°C).
In a mixing bowl, blend cream cheese, Greek yogurt, vanilla, and Swerve until smooth.
Lay out the tortillas and spread a generous strip of the cream cheese filling down the center.
Add a line of fresh blueberries on top.
Roll each tortilla tightly and place seam-side down on a greased air fryer rack or tray.
Brush each roll with melted butter.
Air fry for 8–10 minutes until golden, crisp, and beautiful.
Dust with more Swerve before serving if desired.
