Bakery-Style Turkish Simit

Dough
2 cups water (400 ml)
2 tablespoons sugar
1 tablespoon yeast
1 teaspoon salt
5 tablespoons olive oil or neutral vegetable oil
5 cups flour
For Greasing the Dough
100g butter
1/2 tea glass vegetable oil (about 40–50 ml)
For the Coating
5 tablespoons molasses
1 cup water
2 cups roasted sesame seeds
Directions
Combine all dough ingredients in a bowl and knead until you get a soft dough that does not stick to your hands.
Without resting the dough, divide it into 8 equal pieces, shape each into a ball, then roll them out into long ropes.
Stack the ropes on top of each other, brushing each layer generously with the butter–oil mixture, then cover and let rest for 20 minutes.
After resting, gently stretch each piece with the help of a rolling pin as shown in the video (long and thin), then roll up into a log and place on a tray.
Once all logs are prepared, cover them and let rest for another 20 minutes.
Carefully stretch each rested log again, lengthening it, then twist and shape it into a ring (simit shape).
Dip each ring first into the molasses–water mixture, then coat well with roasted sesame seeds and arrange on a baking tray.
Bake in a preheated 200 °C oven for 25–30 minutes, until golden brown; serve warm.
