Black Bean Brownie Bites

Ingredients

398 ml black beans, drained and rinsed

8 Medjool dates, soaked 10 minutes

1 flax egg (1 tbsp ground flax + 3 tbsp water)

3 tbsp melted coconut oil

1 tsp baking powder

⅛ tsp sea salt

½ cup dairy-free semi-sweet chocolate chips

Directions

Preheat oven to 350°F and line a muffin tin with parchment liners.

Mix ground flax and water to make a flax egg. Let sit 10 minutes.

Soak dates in hot water for 10 minutes, then drain well.

Blend black beans, dates, flax egg, and coconut oil until completely smooth.

Add cacao powder, baking powder, and salt. Blend again until combined.

Fold in chocolate chips by hand.

Divide into muffin liners and flatten slightly.

Bake 22–25 minutes until tops are set.

Cool completely before serving.
