Thai Beef Soup with Coconut Milk

Ingredients:
1lb (450g) beef stew meat or sirloin, thinly sliced
1 tosp vegetable oil
2-3 cloves garlic, minced
1 tbsp fresh ginger, minced
1-2 Thai red chilies, sliced (adjust to heat preference)
1 stalk lemongrass, smashed and chopped into 2-inch pieces
4 cups beef broth
1 can (13.5 oz) coconut milk
2 tbsp fish sauce
1 tbsp soy sauce
• 1 tsp brown sugar or palm sugar
• 1-2 kaffir lime leaves (optional)
• 1 cup mushrooms (shiitake or button), sliced
• 1 cup baby bok choy or spinach
• Juice of 1 lime
• Fresh cilantro, for garnish
• Cooked jasmine rice or rice noodles (optional)
Instructions:
1. Sear the beef:
In a large pot, heat oil over medium-high. Add the beef and sear until browned on all sides.
Remove and set aside.
2. Sauté aromatics. In the same pot, reduce heat to medium. Add garlic, ginger, chilies, and lemongrass. Sauté for 1-2 minutes until fragrant.
4. Add coconut milk & seasoning:
Stir in the coconut milk, fish sauce, soy sauce, sugar, and kaffir lime leaves. Simmer for another 10-15 minutes.
5. Add vegetables:
Add mushrooms and bok choy (or spinach).
Cook until tender, about 5 minutes.
6. Finish with lime juice:
Add fresh lime juice to balance flavors. Taste and adjust seasoning if needed.
7. Serve:
Ladle into bowls, garnish with fresh cilantro.
Serve with rice or rice noodles if desired.
