Ingredients

1/2 cup shredded green cabbage

1/2 cup shredded red cabbage

1 cup shelled edamame, cooked

1/2 cup shredded carrots

1/4 cup sliced green onions

1/4 cup chopped cilantro

1/4 cup toasted sliced almonds

For the Dressing:

2 tablespoons sesame oil

1 tablespoon rice vinegar

1 tablespoon soy sauce

1 tablespoon honey

1 teaspoon grated ginger

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional)

Directions

In a large bowl, combine the green cabbage, red cabbage, edamame, carrots, green onions, cilantro, and almonds.

In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, ginger, garlic, and red pepper flakes (if using) until well combined.

Pour the dressing over the salad and toss gently to coat all ingredients evenly.

Let the salad sit for 10 minutes to allow the flavors to meld.

Serve chilled and enjoy.
