Saucy Simmered Eggs

Ingredients

2 tablespoons olive oil

1 cup chopped onion

¼ teaspoon plus ⅛ teaspoon kosher salt

¾ teaspoon Italian seasoning or dried oregano

2½ cups marinara sauce (20 ounces)

4 large eggs

2 ounces feta cheese, crumbled (½ cup)

4 large slices bread, toasted

Directions

1. Heat the olive oil in a large skillet over medium heat. Add the onion and ¼ teaspoon of the salt. Cook, stirring occasionally, until the onion is tender, about 5 minutes. Add the Italian seasoning and cook for another minute. Add the marinara sauce, bring to a simmer, and cook for about 3 minutes, stirring occasionally.

2. Make 4 indentations in the simmering sauce and crack an egg into each one. Sprinkle the feta around the eggs. Cover and cook over medium heat until the eggs are set to your liking, 5 to 8 minutes. Serve with the toast and chopped dill and/or mint, if desired.
