Festive Spinach Salad

Ingredients

Dressing Ingredients:

1/4 c. White sugar

1/4 c. White vinegar

3/4 c. Light oil

1/2 tsp salt

2 tsp. Celery seed

1/4 sweet onion

Candied Pecan Ingredients:

Pecan Pieces

Brown sugar

Salad ingredients:

Baby spinach

Cubed old white cheddar

Clementine orange sections

Dried cranberries

Directions

To candy pecans melts brown sugar and pecans in non-stick frying pan. Turn out on to silpat or parchment and allow to cool. Break or cut into smaller pieces

Make dressing by combining ingredients in blender or food processor until smooth

Toss salad ingredients, dressing and candied pecans in a large bowl.
