Crispy Parmesan Sweet Potato Wedges

Ingredients

2 lb Sweet Potatoes, quartered

.5 cup Breadcrumbs

.5 cup Grated parmesan cheese

2 tsp Italian Seasoning

2 eggs

1/2 tsp red pepper flakes

Directions

1. Preheat oven to 350F. Cut potatoes into 1/2 inch wedges or slices, set aside

2. In shallow bowl, mix bred crumbs with cheese and seasoning blend.

3. Dip wedges in beaten egg; drain and dredge in crumb mixture.

4. Arrange on lightly oiled pan and bake 20 to 30 minutes or until tender.

5. Sprinkle with red pepper flakes and serve piping hot.
