2 boneless, skinless chicken breasts (about 1 pound total)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper to taste
1 tablespoon olive oil
1 cup barbecue sauce
1 cup shredded Monterey Jack cheese
1/2 cup cooked bacon, crumbled
1/4 cup green onions, sliced
Directions
Preheat the oven to 375°F (190°C).
Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper on both sides.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 4-5 minutes on each side until golden brown.
Pour the barbecue sauce over the chicken, then sprinkle the shredded Monterey Jack cheese and crumbled bacon on top.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
Remove from the oven and garnish with sliced green onions before serving.
