Dill Pickle Pasta Salad

1 lb fusilli noodles
1 cup mayo
1 teaspoon Dijon mustard
1 large garlic clove, grated
2 tablespoons apple cider vinegar
3 tablespoons fresh dill, roughly chopped and packed
1 teaspoon white sugar
3 tablespoons sweet pickle relish
1 (8-ounce) block Roth Havarti cheese, cut into squares
2 cups chopped dill pickles
2 tablespoons pickle juice
Kosher salt, to taste
Fresh cracked black pepper, to taste
Directions
Boil the fusilli noodles according to the package directions. Drain, rinse with cold water, and set aside to chill.
In a large mixing bowl, whisk together the mayo, Dijon mustard, grated garlic, apple cider vinegar, chopped dill, pickle relish, sugar, 2 hefty pinches of kosher salt, and a few cracks of black pepper.
Add the chilled pasta and chopped dill pickles to the bowl. Gently fold everything together until well coated.

Add the pickle juice to loosen the dressing. Feel free to add more depending on your pasta shape and desired consistency.
Stir in the Roth Creamy Havarti cheese squares and taste for seasoning. Add more salt and pepper if needed.
Chill until ready to serve, or dig in immediately if you just can’t wait.
