Chocolate Cottage Cheese Ice Cream

Ingredients

2 cups cottage cheese (full-fat)

1/3 cup cocoa powder (unsweetened)

1/3 cup sweetener (powdered)

4 tbsp almond butter (or peanut butter)

2 tsp vanilla extract

a pinch of salt

2/3 cup heavy cream

2-3 tbsp chocolate chips (sugar-free)

Directions

Blend Until Silky. Blend cottage cheese, cocoa, sweetener, nut butter, vanilla, and salt until smooth.

Incorporate Cream. Add heavy cream and blend until thick and creamy.

Customize. Taste and adjust. Stir in chocolate chips or nuts if desired.

Freeze. Pour into a shallow container, smooth top, cover, and freeze for 3-5 hours.

Serve. Let sit at room temperature for 10-15 minutes before scooping.
