Banana Churro Mini Muffins

1 cup mashed bananas
2 eggs (room temperature)
1/3 cup avocado oil (or vegetable/canola oil)
1/3 cup maple syrup or honey
1 tsp vanilla extract
1 3/4 cups oat flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
2 tsp cinnamon + 1/3 cup sugar for rolling
Directions
Preheat oven to 350°F and line a mini muffin pan with mini liners or spray the pan to prevent sticking
In a bowl, whisk together bananas, eggs, oil, maple syrup, and vanilla.
In another bowl, mix oat flour, baking soda, salt, cinnamon, and nutmeg.
Gently fold the dry ingredients into the wet until just combined.
Spoon batter into the muffin pan, filling 3/4 of the way.
Bake for 13-15 minutes (or 18-22 minutes for regular-sized muffins).
Shake warm muffins in a cinnamon-sugar mix for that classic churro coating.
