Spareribs ala Paysanne

3 lbs spareribs
1/2 cup chopped onion
1/2 cup chopped celery
1/3 cup oil
4 cups toasted bread cubes
2 cup diced and peeled apples
2 tsp chopped parsley
1/2 tsp salt
1/8 tsp pepper
1/2 tsp sage
2 tbsp sage
Directions
Divide ribs in equal size length
Place 1/2 ribs (hollow side up) on a rack in a shallow roasting pan.
Saute onion and celery in oil until the onion is transparent.
In a separate bowl, mix remaining ingredients. Add sauted veggies and toss together lightly. Fill hollow in ribs with stuffing. Cover with the remaining 1/2 ribs (hollow side down).
Tie ribs together.
Sprinkle with additional salt and pepper.
Cover with foil
Bake at 350F until almost tender (roughly 1 1/2 hours)
Uncover and bake until tender and crisp, roughly another 40 minutes.
