Ingredients

4 Chicken thighs, boneless skinless

4 cloves Garlic

1 Parsley, Fresh

2 Zucchinis, medium

1/4 cup Honey, hot

2 tbsp Soy sauce

1/2 tsp Black pepper

1 tsp Paprika

1 tsp Salt

2 tbsp Olive oil

Directions

1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper for easy cleanup.

2. Prepare Marinade: In a small bowl, mix the hot honey, minced garlic, soy sauce, olive oil, paprika, salt, and pepper until well combined.

3. Coat Chicken: Place the chicken thighs in a large bowl. Pour half of the marinade over the chicken, making sure to coat them thoroughly.

4. Arrange on Pan: Lay the marinated chicken thighs on the prepared sheet pan. Add the sliced zucchini around the chicken.

5. Add Remaining Marinade: Drizzle the remaining marinade over the zucchini, tossing to coat.

6. Roast in Oven: Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the zucchini is tender and slightly caramelized.

7. Garnish and Serve: Remove from the oven, garnish with fresh parsley, and serve directly from the pan, allowing everyone to help themselves.
