Ingredients:
Seasoned Flour:
– 2 2/3 cups flour
– 2 tablespoons Cajun seasoning
– 1 tablespoon paprika
– 1 tablespoon onion powder
– 1 tablespoon garlic powder
– 2 1/2 teaspoons black pepper
– 2 1/2 teaspoons poultry seasoning
Wet Batter:
– 1 1/3 cups flour
– 1 teaspoon black pepper
– 3 eggs
– 12 oz water
– 1 tablespoon Cajun seasoning
Directions
1. In one bowl, whisk together all ingredients for the seasoned flour mix.
2. In a separate bowl, mix flour, pepper, eggs, water, and Cajun seasoning until smooth to form the wet batter.
3. Dip chicken pieces first into the wet batter, then dredge thoroughly in the seasoned flour mix.
4. Let coated chicken rest on a rack for a few minutes to set the coating.
5. Heat oil in a deep fryer or large heavy-bottomed pot to 350°F.
6. Fry chicken in batches, avoiding overcrowding, until golden brown and cooked through (internal temp of 165°F), about 12–15 minutes depending on size.
7. Drain on paper towels or a wire rack.
8. Serve hot and crispy.
