Blueberry Oatmeal Breakfast bars

Ingredients

1 cup whole oats

1 cup oat flour ( or all purpose flour)

1/2 cup brown sugar

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 almond milk ( or regular milk)

2 eggs

1/4 cup melted butter

1 teaspoon vanilla extract

1 cup fresh of frozen blueberries

1/2 cup chopped walnuts (optional)

1/3 cup shredded coconut (optional)

Directions

1. Preheat oven to 350 degrees Grease an 8-inch square pan

2. Combine whole oats, flour, brown sugar, salt and baking soda in a bowl. Stir in eggs, milk, butter, vanilla until well combined. Fold in blueberries and opional ingredients.

3. Bake in preheated oven until the edges are golden. about 25-30 minutes ( be carecul not to over bake) Cool in pan for 10 minutes before cutting into squares
