Spicy Red Lentil Dhal

Ingredients

1 tbsp olive oil 1 onion, chopped 1 red chilli, chopped 2 garlic doves, crushed

2 small sweet potatoes, chopped 1 x 400g tin of chopped tomatoes 950ml vegetable stock 200g red lentils 2 tbsp of medium-hot curry powder 1 tsp ground cumin 1 tsp ground coriander 3 handfuls of spinach leaves To serve: Natural yoghurt A handful of fresh coriander, chopped Naan breads or rice ^

Directions

1 Heat the olive oil in a large frying pan over a medium-high heat and cook the onion, chilli and garlic for 3-4 minutes. Add the sweet potatoes, tinned tomatoes and stock.

2 Place the lentils in a sieve and rinse under cold running water. Add to the pan,cover and simmer for 10 minutes.

3 Stir in the curry powder, cumin and coriander. Simmer for another 10 minutes until the mixture has thickened and the sweet potatoes are soft.

4 Remove from the heat and stir in the spinach until wilted.

5 Serve in warm bowls with a dollop of natural yoghurt, some chopped coriander, a naan or some rice.
