Banana Chocolate Chip Muffins KFP Passover
Yields 12 muffins

2 bananas, overripe
3 eggs
1/2 cup almond butter
3 tbsp honey
1 tsp vanilla
1 tsp cinnamon
1 tsp baking soda
1 ½ cup almond flour
Pinch salt
Chocolate chips
Unsweetened shredded coconut (optional)
Directions
Preheat oven to 425ºF.
In a blender, combine bananas, eggs, almond butter, honey, vanilla, cinnamon, baking soda, almond flour and salt. Once combined, fold in chocolate chips and coconut.
Line a muffin tin with parchment muffin liners. Measure out 1/3 cup of mixture into each muffin cup.
Bake for 8 minutes. Reduce temperature to 350ºF and then bake for an additional 10 minutes.
