Beef & Ramen Noodle Stir-Fry with Bok Choy & Sesame Seeds

10 oz Ground Pork
2 Tbsps Soy Glaze
½ lb Fresh Ramen Noodles (Previously Frozen)
2 cloves Garlic
1 tsp Black & White Sesame Seeds
10 oz Baby Bok Choy
1 Tbsp Mirin (Salted Cooking Wine)
2 tsps Chipotle Chile Paste
2 Tbsps Black Bean Sauce
Directions
1 Prepare the ingredients & make the sauce Fill a medium pot 3/4 of the way up with salted water; cover and heat to boiling on high. Wash and dry the bok choy; cut off and discard the root ends. Thinly slice crosswise. Peel and roughly chop 2 cloves of garlic. In a bowl, whisk together the mirin, soy glaze, black bean sauce, 1 tablespoon of water, and as much of the chile paste as you'd like, depending on how spicy you'd like the dish to be.
2 Cook the pork & bok choy In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the pork; season with salt and pepper. Cook, stirring frequently and breaking the meat apart with a spoon, 5 to 7 minutes, or until browned. Add the chopped garlic. Cook, stirring frequently, 1 to 2 minutes, or until combined. Add the sauce (carefully, as the liquid may splatter) and sliced bok choy. Cook, stirring frequently, 1 to 2 minutes, or until combined and the pork is cooked through. Turn off the heat. Taste, then season with salt and pepper if desired.
3 Cook the noodles Add the noodles to the pot of boiling water, stirring gently to separate. Cook, stirring occasionally, 3 to 5 minutes, or until tender. Turn off the heat. Drain thoroughly and rinse under warm water 30 seconds to 1 minute to prevent sticking. Return to the pot.
4 Finish the noodles & serve your dish To the pot of cooked noodles, add the cooked pork and bok choy; stir until thoroughly coated and combined. Serve the finished noodles garnished with the sesame seeds. Enjoy!
