Mediterranean Pasta Salad

Ingredients

⅓ cup olive oil

1 tbsp chopped fresh basil

1 tbsp chopped green onion

2 tbsp grated Parmesan cheese

¼ tsp salt

⅛ tsp ground black pepper

8 oz rotelle or rotini pasta, cooked, drained and cooled

1 orange pepper, in strips

cherry tomatoes, as desired

snap peas, as desired

1 ham steak (honey or maple), chunked

fat free crumbled feta cheese, as desired

¼ tsp dried oregano

Directions

In a food processor or blender mix the oil, basil, green onion, Parmesan cheese, salt and pepper until smooth.

Place pasta in a large bowl and add the pepper, tomatoes, snap peas, ham, and feta. Pour in dressing and toss to mix. Sprinkle with oregano.
