Best Ever Tacos

RECIPE - Makes 16 mini tacos

4 Cutdacarb flatbreads

1 lb ground beef

2 Tbsp homemade taco seasoning

1/4 cup water

2 Tbsp refried beans

1/2 of an onion, diced

1/4 cup shredded Colby Jack cheese (filling)

1 cup shredded Colby Jack cheese (topping)

shredded lettuce

1 Roma tomato, chopped

Directions

Scramble the ground beef with the onions until cooked through. Drain excess grease.

Add in the taco seasoning, water, refried beens and 1/4 cup of shredded cheese.

Stir until the cheese is melted and the beans are incorporated. Set aside.

Fold the flatbread in half and then in half again. Cut a circle out of it forming, 4 small taco shells. Repeat with remaining flatbreads. *save trimmings to make chips or tortilla strips out of.

Fill each taco shell with some of the taco meat followed by a little bit of shredded cheese. Place them into a greased 9x13 baking dish one by one using a glass as a place holder. (See video.)

Bake at 375 for 15-20 minutes.

Remove from oven and add on some shredded lettuce and chopped tomatoes.
