Easy Teriyaki Chicken Fried Rice

Ingredients

2 cups cooked rice (preferably day-old)

2 chicken breasts or thighs, diced

2 tbsp teriyaki sauce (plus more to taste)

1 cup mixed vegetables (peas, carrots, corn)

2 eggs, lightly beaten

2 green onions, sliced

2 tbsp soy sauce

1 tbsp sesame oil or vegetable oil

Directions

Heat oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5–7 minutes. Add 2 tbsp teriyaki sauce and stir to coat. Remove and set aside.

In the same pan, scramble the eggs until just cooked. Push to one side.

Add vegetables to the pan and cook for 2–3 minutes until softened.

Add cooked rice and return the chicken to the pan. Stir everything together.

Pour in soy sauce and more teriyaki sauce to taste. Stir-fry for another 2–3 minutes until heated through.

Garnish with green onions and serve hot.
