Ingredients

6 cups arugula & spinach mix (or baby kale)

½ cup shredded Brussels sprouts

½ cup thinly sliced radishes

½ cup cooked quinoa, cooled

¼ cup crumbled feta cheese

¼ cup toasted walnuts or pecans

¼ cup dried cherries or cranberries

Dress It Up Dressing Peach Vinaigrette

Directions

In a large bowl, combine the spinach & arugula mix (or baby kale) with the shredded Brussels sprouts.

Add the radishes, quinoa, crumbled feta, toasted nuts, and dried cherries.

Drizzle with Dress It Up Dressing Peach Vinaigrette and toss gently to coat.
