Carne Con Papas - Beef and Potatoes Stew

2 Lbs Ground Beef
1 Tbsp Black Pepper
1 Tbsp Garlic Salt
1/4 Diced White Onion
5 Potatoes peeled and diced
Salt to taste
Red Chile Sauce
6 Roma Tomatoes
1/4 White Onion
1 Large Jalapeño Pepper
1 1/2 Tbsp Tomato Chicken Bouillon
1 Tsp Oregano
1/2 Tsp Cumin
2 Cups Water
Directions
To a large skillet add, meat and season with pepper, garlic salt and break up the meat into large pieces. Continue breaking the meat into smaller pieces as it cooks. Cook until browned.
Add diced potatoes and stir to combine. Cover and cook potatoes for 7 minutes.
Add diced onion and stir to combine.
To a blender cup add tomatoes, onion, jalapeño pepper, bouillon, oregano, cumin, water and blend until smooth. Set aside.
Add blended sauce and stir to combine. Bring to a boil over medium heat, reduce heat, cover and simmer over medium-low heat for 15 to 20 minutes or until potatoes are tender.
Serve with red or white rice.
