Soy sauce Eggs (Ajitsuke Tamago)

Ingredients

4-6 Eggs

Marinate:

1/2 c. Soy sauce

1/2 c. Water

1 T sugar

(Optional flavorings: garlic cloves smashed, whole chili pepper, chili crunch, sesame seeds)

Directions

Prick the wider end of each egg with a needle or thumbtack.

Bring pot of water to boil.

Make marinated by mixing all the ingredient together in a bowl (one that has a cover).

Once the water is boiling, gently lower the eggs into the water and cook adjusting the heat to maintain a simmer. Cooks eggs for 8 minutes for softish yolk.

Gently spoon out the cooked eggs and place them in the water bath. Cool for 5 minutes. Peel the eggs and place them in the marinate. Refrigerate for a few hours or preferably overnight. The will keep for up to a week.

Serve over rice with a bit of the sauce. Additionally, excellent in ramen.
