2lbs ground lamb
1 large onion grated
1 large carrot grated
2 cloves garlic grated
2tbsp Worcestershire sauce
1.5 tbsp tomato paste
2 sprigs of fresh thyme leaves
1 sprig fresh rosemary chopped
1 cup red wine
1 cup chicken stock
Frozen peas
Mashed Potatoes
2.5 lbs potatoes (5-6 Yukon gold)
1/2 cup cream
4 tbsp butter
6 tbsp Parmesan cheese grated
2 large egg yolks
Directions
Cook lamb until browned
Add in grated onion and carrot cooking for 4 minutes.
Add in garlic
Stir in Worcestershire sauce and tomato paste. Add wine and fresh herbs. Cook until wine is mostly evaporated.
Add chicken stock and frozen peas and cook for 3-4 minutes. Turn off heat and set aside
Make mashed potatoes. Stir in butter, cream, egg yolks and Parmesan.
Spread meat in a 9x13 pan. Add mashed potatoes. Top with Parmesan cheese.
Bake at 350F for 20 minutes.
