Ingredients

2 large russet potatoes

4 tbsp potato starch

2 tbsp avocado oil

1 cup mozzarella cheese

GLAZE

2 tbsp soy sauce

3 tbsp sugar

1 tbsp rice wine vinegar

Directions

Peel, chop, and boil potatoes

Mash and mix with potato starch, avocado oil, and salt

Form mochi shape and stuff with shredded cheese

Pan fry both sides until golden brown and crispy

Create glaze with soy, sugar, and rice vinegar

Add mochi back in briefly on both sides
