Thermomix Muesli Bars

Ingredients

80 g butter

50 g brown sugar

45 g honey

1 tsp Vanilla

160 g oats not quick oats

60 g dates chopped fine. Or other fruit of your choice great way to use up leftovers

20 g desiccated coconut

60 g nuts I used chopped almonds in this one but anything you like or a mix

40 g pepitas

1 pinch of cinnamon

1 pinch of Allspice or mixed spice

1 pinch salt

Directions

Line a tin 14cm (w) x 30cm (l) x 5.5cm (h) with baking paper leaving a little extra on two sides, so they're easy to remove later.

Preheat your oven to 180°c

Weigh the sugar, butter, honey and vanilla into the TM bowl and set to 50°c/5 mins/ speed 3.

Weigh the remainder of the ingredients into the TM bowl and set to reverse speed +3/ 10 seconds (if you have a TM 5 you can be doing this in a bowl on top of your TM while the last step is happening. Yes you can weigh while it's working but not if it's rocking around. ?

Pour the mixture out of the jug into the prepared tin and gently press down to flatten them.

Pop them in the oven and bake for 20 minutes then cover with a baking paper lined foil hat like this and bake for a further 15 minutes.

Remove from the oven and let rest for 10 minutes, then using a knife mark the top into 10 – 12 portions while still warm. Allow to cool completely in the tin and when cold, remove and finish the cutting.
