Small Batch Lemon Bars

Who doesn’t love a lemon bar? For the printable recipe comment “LEMON” below & I’ll DM you the recipe. This lemon bar recipe is so easy to make. I used @Lindsey Braham shortbread cookie mix for the crust. It adds the perfect sweetness to these bars.
Crust
1pkg XO Baking Shortbread Cookie Mix
8 tbsp butter, room temp
1 egg yolk
Directions
Preheat the oven to 350 degrees. In a bowl add the ingredients and mix with a hand mixer for 3 minutes until well combined. Spray a 8” x 8” baking dish with nonstick baking spray or butter and then line with parchment paper. Press the crust into the pan and bake for 12 minutes. Remove and follow the next step.
Filling
¾ cup lemon juice
¾ cup sugar
¼ cup gluten free flour
Powdered Sugar for topping
In a bowl mix together the lemon juice, sugar and flour. Pour into the prebaked crust, place back into the oven for 24-26 minutes. The filling should be set. Let sit at room temp for 1 hr and then place in the fridge to cool completely. Before serving, top with powdered sugar and enjoy!
