Amatricana - Official Recipe of Amatrice

Ingredients

500 grams Spaghetti

125 grams Amatrice Bacon (Pancetta/Guanciale)

1 tablespoon Olive Oil

1 teaspoon White Wine

400 grams San Marzano Tomatoes

1 tablespoon chili pepper

100 grams pecorino romano

salt

Directions

Bring pot of salted water to a boil, add pasta. Cook according to instructions.

Dice bacon and chili pepper. Cut tomatoes into fillets, remove seeds if possible.

Heat pan, add oil, bacon, pepper.

When bacon is browned add white wine, when it stops sizziling and all alcohol is gone remove everything from pan.

Add tomatoes to the pan, cook for 5 minutes. Adjust with salt to taste.

Add the bacon and peppers to the sauce. Mix.

When pasta is finished cooking, drain, then plate. Top grated pecorino on top of pasta.

Pour sauce over pasta.
