Cranberry Orange Chicken

2 chicken breasts
1/2 tsp. salt
1/4 cup butter
3 T flour
1/8 tsp. cinnamon
Dash ginger
2 cups orange juice
1/2 cup slivered almonds
1/2 cup craisins
1 can mandarin oranges
4 cups hot cooked rice
Directions
PAN FRY CHICKEN
1. Wash chicken in cold water; pat dry with paper towels. Sprinkle with 1/4 tsp. salt
2. Heat butter in large skillet. Brown chicken lightly; remove.
INSTANT POT CHICKEN
1. Cook chicken breasts with salt in instant pot
2. Heat butter in large skillet
REMAINING RECIPE
3. Mix flour, remaining salt, cinnamon, and ginger. Blend into pan drippings, to make a smooth paste.
4. Add orange juice; cook, stirring constantly until sauce bubbles and thickens. Add cooked chicken to skillet along with almonds and craisins.
5. Cover; cook over low heat about 45 minutes, or until chicken is fork tender.
6. Add orange sections; heat through. Serve chicken and some of the sauce on a bed of rice. Pass remaining sauce.
