Baked Sweet Potato Toast with Guacamole, Feta and Pomegranat

Ingredients for 4-5 pieces

1 sweet potato (approx. 350g)

2 avocado

1 small red onion

150g date tomatoes

Chopped coriander

Pomegranate seeds

Feta cheese

olive oil

Salt,pepper

cut the sweet potato lengthwise into slices about 1 cm thick. Put them on a baking tray, brush them with olive oil and season with salt.

Directions

bake in the oven at 190°C for 20 minutes.

prepare the guacamole by smashing the avocado in a bowl, season with salt, then combine with finely diced onion, date tomatoes and cilantro.

when the sweet potato toasts are done, let them cool for 1 minute.

then spread with guacamole, crumble feta on top and garnish with pomegranate seeds and some chopped cilantro.
