Lemon Meringue Pie

Ingredients

1 1/2 cups sugar

1/3 cup corn starch

1 1/2 cups water

3 egg yolks, slightly beaten

3 T. butter

1/4 cup lemon juice

1 T. grated lemon rind

3 egg whites

1/4 tsp. cream of tartar

6 T. sugar

1/2 tsp. flavoring

Directions

Cook sugar, corn starch and water over medium heat, stirring constantly until mixture thickens and boils. Boil 1 minute. Slowly stir half of hot mixture into 3 egg yolks, slightly beaten. Blend into hot mixture insaucepan. Boil 1 minute. Remove from heat and add butter, lemon juice, and grated lemon rind. Pour into baked pie shell.

Beat egg whites with cream of tartar until frothy. Gradually beat in sugar. Beat until sugar is dissolved. Pile on pie and bake at 400 for 8 - 10 minutes.
