Peanut Butter Noodles with Halloumi {Satay-Style Stir Fry}

2 tsp Olive oil
1 Large onion (Sliced)
4 Peppers (Sliced)
450 g Halloumi (See notes)
250 g Egg noodles
2 Spring onions
50 g Salted peanuts (To garnish)
125 g Peanut butter
6 tbsp Soy sauce
3 tbsp Sweet chilli sauce
1 tsp Garlic puree
2 tbsp Honey
Enough boiling water to make a smooth sauce
Directions
Heat half of the oil in a pan and pan fry the onions and peppers.
Set aside. Heat the rest of the oil and pan-fry the halloumi until crisp.
While it’s frying, cook the noodles according to the pack instructions.
Mix the sauce ingredients and whisk until smooth.
Combine everything together and stir really well.
Sprinkle with spring onions and peanuts to serve.
