Lemon Blueberry Olive Oil Loaf

Ingredients

2 cups plain flour

2 tsp baking powder

½ cup sugar

1 tsp vanilla extract

1 tbs each of lemon zest & juice

½ cup olive oil

¾ cup milk

2 large eggs

2 cups frozen blueberries

To serve)

¾ cup thick plain yoghurt

½ tsp lemon zest

Directions

Preheat oven to 175 degrees c. Line a loaf tin. Set aside.

Combine dry ingredients into a mixing bowl. Whisk together.

Combine wet ingredients in a separate bowl and whisk well to combine.

Fold wet ingredients into dry and mix until just incorporated. Gently stir through blueberries.

Bake in oven for 45-50 minutes or until golden and a toothpick comes out clean when inserted into the centre. Set aside to cool.

Once cool, add a dollop of yoghurt, a good drizzle of olive oil and sprinkle over lemon zest. Enjoy!
