Chocolate Chip Banana Bread

3 very ripe bananas (~1 ¼ to 1 ½ cups mashed)
1/3 cup melted butter (unsalted or salted)
1 tsp baking soda
Pinch of salt
2/3 cup granulated sugar (or brown sugar or a mix of both)
1 large egg, beaten
1 tsp vanilla extract
1 tsp cinnamon
1 ½ cups of all purpose flour
1/2 cup of chocolate chips (not more than this)
Directions
Preheat the oven to 350 F (175 C)
In a mixing bowl, mash the ripe bananas with a fork until smooth.
Stir melted butter into the mashed bananas
Mix in the baking soda, cinnamon & salt.
Stir in the sugar, beaten egg and vanilla extract. Mix in sour cream if using.
Mix in the flour.
Add chocolate chips.
Line nonstick loaf pan (or round pan) with parchment or grease with butter.
Pour batter into prepared loaf pan and bake for 50 minutes to 1 hour at 350F or until center springs back on touch and toothpick comes out clean. (Will be less time if not using a loaf pan – could be as quick as 20 minutes)
Remove from oven and let cool
Notes
Can also add ½ cup of sour cream to make it extra moist
