Lemon Salmon

Ingredients

For Salmon:

4 salmon fillets

Salt, pepper, garlic powder, and , lemon pepper

2 tablespoons olive oil

For Parmesan Potatoes:

4 medium-sized Yukon gold potatoes, peeled and sliced

1 cup grated Parmesan cheese

1 cup heavy whipping cream

4 tablespoons butter

Salt, pepper and seasonings of choice

For Creamy Garlic Herb Sauce:

1 cup heavy cream

3 cloves garlic, minced

2 tablespoons fresh dill, chopped

2 tablespoons fresh parsley, chopped

4 tablespoons sun-dried tomatoes, chopped

Salt and pepper to taste

Directions

Season salmon fillets. In a skillet, heat olive oil over medium-high heat. Cook salmon for 4-5 minutes per side or until cooked through.

For Parmesan Potatoes, boil sliced potatoes until tender. In a separate pan, combine heavy cream, butter, and Parmesan cheese. Stir until the cheese melts. Add potatoes and cook until the mixture thickens. Season to your liking.

For Creamy Garlic Herb Sauce, in a saucepan, combine heavy cream, minced garlic, dill, parsley, and sun-dried tomatoes. Simmer over low heat until the sauce thickens. Season with salt and pepper.

Serve the salmon fillets on a plate, on top of Parmesan Potatoes, and drizzle with the Creamy Garlic Herb Sauce.
