Cottage Cheese Wrap w Avocado & Egg

Ingredients

½ cup cottage cheese

1 egg

Sea salt

Topping:

2 additional eggs (cooked to your liking)

¼ large avocado, sliced

1 tsp chili oil

Directions

Preheat oven to 400°F. Line a baking sheet with parchment paper.

Mix the cottage cheese and 1 egg until fully combined. Season lightly with sea salt.

Spoon the mixture into 2 small circles on the prepared baking sheet, gently spreading into thin rounds.

Bake for 18–25 minutes, until the bottoms are lightly browned and the tops are just firm but still soft.

Let cool for 5 minutes, then remove from the parchment.

Top each round with a cooked egg, avocado, and chili oil. Fold and eat like tacos.
