Scone/Shortcake

Preheat oven to 400 degrees.

21.25 oz flour

3.5 oz sugar

2 t baking powder

1/2 t baking soda

1/4 t salt

Sift these ingredients, then cut in 8 oz cold butter, chilled and cubed with pastry blender.

Add 2 c cream and optional fruit (1 c currants).

Form into rectangles or triangles and bake on parchment-lined sheetpans for 10 mins.

Rotate 5 - 12 more. Cover with towel.
