I drop one of these super simple healthy, prep-able marinated salad recipes every single week on my page and this Dan Dan Edamame Salad was the most popular last year.
Nutty, savory, a little spicy, and crushable. You may wanna make a double batch of this one folks.

Dan Dan Edamame:
Edamame: 1 (12oz) bag
White beans: 1 can, (I like navy or great northern)
Red Cabbage: ¼ to 1/2 of a small head
Red Bell Pepper: 2/2 to 1 pepper
Avocado: 1/2
Scallion, greens only: 3-4 stalks
Cilantro: 1/2 bunch (use your judgement)
Chili Flakes: to taste, optional
White & Black sesame seeds: to taste, optional
Salt: to taste (you probably don't need it)
Sesame Dressing:
Light Soy Sauce: 1/4 cup
Chinkiang Vinegar: 2 tsp (or sub with rice wine vinegar)
Chili Oil/Crisp: 2-8 tbsp (I use @flybyjing ) *see note
Sichuan Peppercorn Oil: 1 tsp (I use @50hertzfoods)
Tahini/Sesame Paste 1/2 cup * see note
Garlic Clove: 1-2 grated
NOTE This dressing recipe makes more than you need, add to taste. Use your judgment when making the dressing, tahini and chili oils vary wildly so you may need to adjust amounts. My chili oil was very mild and my tahini was on the runnier side for reference.
