Char Siu Pork Tenderloin

1-2 lb pork tenderloin
1-2 tbsp reserved honey, for thickening
Marinade mixture:
3 tbsp. light soy sauce
1.5 tbsp. fish sauce
3 tbsp. hoisin sauce
1.5 tbsp. sake
1 tbsp. honey
1/2 tsp. Chinese five spice powder
2 cloves garlic, sliced
1 thumb ginger, sliced
Directions
Optionally, cut pork tenderloin into two long strips.
Combine marinade in medium mixing bowl. Add tenderloin and cover (or use a bag). Marinade 12-24h, turning once if possible.
Preheat oven to 425F.
Line half-sheet baking pan with foil and put baking rack on top. Remove pork from bowl/bag and place on rack. Transfer sauce to saucepan and bring to simmer.
Roast pork at 425F for 10 minutes.
When sauce is at a simmer, add 1-2 tbsp extra honey to thicken, stirring. Cook until syrupy, 1-2 minutes.
Remove pork from oven. Baste with sauce on both sides and return to oven 23 minutes, or until the internal temperature is 135-140F.
Notes
increase amount of sauce by 1.5-2x
