1½ lbs ground beef (90% lean or higher)
3 cups cooked basmati rice
2 bell peppers, thinly sliced
1 cup shredded carrots
2 green onions, sliced
2 tablespoons soy sauce (low-sodium)
1 tablespoon hoisin sauce
1 teaspoon sesame oil
1 teaspoon garlic powder (or 2 cloves minced)
1 teaspoon ginger powder (or 1 teaspoon fresh grated ginger)
1 teaspoon rice vinegar
Optional garnish: Sesame seeds, chopped cilantro, or chili flakes
Directions
Cook rice: Prepare basmati rice according to package directions and set aside.
Brown beef: Heat a skillet over medium-high heat. Add ground beef and cook until browned, breaking it up into crumbles. Drain any excess fat.
Cook veggies: Add the bell peppers, shredded carrots, and garlic (or garlic powder) to the skillet with the beef. Sauté for 3–4 minutes until the veggies are slightly softened.
Make the sauce: In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, ginger, and rice vinegar.
Combine: Pour the sauce over the beef and veggie mixture. Stir well to coat and let it simmer for 2–3 minutes, allowing the flavors to meld.
Assemble bowls: Divide the cooked rice into individual bowls. Spoon the beef and veggie mixture over the rice.
Garnish: Sprinkle sesame seeds, sliced green onions, chopped cilantro, or chili flakes for extra flavor.
