Honey Miso Chicken with Ginger Broth & Rice

Chicken
1 chicken breast, cut into smaller tenders
1 tbsp miso paste
2 tbsp soy sauce
1 tbsp rice wine vinegar
1 tbsp honey
2 garlic cloves, grated
1 tbsp sesame oil
Broth
300ml chicken broth
1 spring onion, roughly chopped
3 coriander roots
4cm piece of ginger, roughly chopped
1 garlic clove, roughly chopped
1/2 tbsp peppercorns
Rice
1/2 cup washed white jasmine rice
3cm piece of ginger, grated
1 cup water
Pinch of salt
Other ingredients
2 spring onions
Broccolini
To serve
sesame seeds
Chilli crisp oil
Coriander
Chives
Directions
Start with the broth by simmering together all the ingredients in a pot with the lid on.
During this time mixed together all the chicken marinade ingredients until smooth then add in the chicken and toss until all coated. (You can do this the night before)
In a pan, on medium heat, fry the chicken on both sides until golden. Keep pouring in the remaining marinade to make it sticky and saucey.
During this time make the rice by adding all the ingredients to a pot, simmer on low heat until the water has evaporated and the rice is cooked and fluffy.
